Spice Cake

Easily the most consumed dessert in our home as kids (and adults)...this is one of our family favorites! It's what we beg our mom to make (still) late at night when we are playing games and laughing. Caution: Can be consumed in one sitting. Just as good the second day, so don't think you'll be able to resist it Monday morning when you've recommitted to dieting if you have made it Sunday evening...I'm just sayin'...

Spice Cake
Cream together:
1 cup sugar
1/2 cup shortening
2 eggs

Add:
2 cups flour
1/2 tsp salt
1 1/4 tsp cinnamon
1/2 tsp nutmeg
1 teaspoon baking soda dissolved in 1 1/8 cups water

Mix well. Pour into greased 9X13 pan. Back for 20 minutes at 350.
While still hot, pour on frosting.

FROSTING:
2 Tbsp butter
2 Tbsp shortening
2 Tbsp cream (whipping is best, but half & half works too)
1/2 cups brown sugar

Bring to boil stirring constantly. Whip until thickens ALMOST to spreading consistency. Pour over cake.

  1. such a great idea you two!! and yes, spice cake is SO good and is one of my weaknesses too. pumpkin chocolate chip bread is numero uno. yum!! :p
